scant 1/2 cup superfine sugar
1 cup water
4 large ripe peaches, skinned, halved and stoned, and sliced
2 tablespoons lemon or lime juice
1 small ripe peach, sliced, for decoration
method
1. Put the sugar and water in a saucepan and stir over a low heat until the sugar dissolves, then bring to the boil and boil for 1 minute. Take the syrup off the heat and let it cool for 30 minutes. Pour it into a bowl, cover and refrigerate for 1 1/2 hours.
2. Blend the peach slices in a food processor for 1 minute, then add the syrup and the lemon or lime juice, and blend for 30 seconds more. Pour the mixture into a plastic box, cover and freeze for about 3 hours or until hard.
3. Peel and slice the small peach. Cut the frozen peach mixture into large pieces and blend in a food processor for 10 seconds, until soft. Spoon the sorbet into individual dishes and decorate each serving with some peach slices. Serve at once.
