These crunchy little peanut butter cookies, lightly flavoured with orange and spice, have a soft, cake-like centre.

1 cup plus 2 tablespoons self rising flour
3/8 cup light dark brown sugar
1/3 cup butter, at room temperature, plus extra for greasing
1/3 cup crunchy peanut butter
1 medium egg
1/2 teaspoon ground mixed spice
1 small orange
method
1. Preheat the oven to 190°C (375°F). Lightly grease a large baking sheet.
2. Put the flour, sugar, butter, peanut butter, egg and mixed spice into a mixing bowl. Wash any wax off the orange, then finely grate the rind into the bowl. Beat all the ingredients together until they are well mixed and smooth.
3. Spoon 12 tablespoons of the mixture onto the baking sheet, leaving room for each to spread.
4. Bake the cookies for 12 - 15 minutes or until they are golden brown and firm. Leave them to cool for 2 - 3 minutes on the baking sheet, then lift them off with a palette knife and finish the cooling on a wire rack.

These peanut butter cookies freeze really well. If you have time, it is worth making a double batch so that you can freeze half for another time.
