Pears with Ginger Syrup

Cooking time: 1 1/4 - 1 1/2 hours plus chilling time

ingredients

serves 4
4 pears, peeled, cored and thickly sliced
juice of 1 lemon
1/4 cup sugar
1 inch piece of fresh ginger root, peeled and thinly sliced
3/4 cup water

method

1. Place the pears in a serving dish and pour over half the lemon juice. Put the dish in the refrigerator while you make the syrup.

2. Put the sugar, ginger, the remaining lemon juice and the water into a small pan. Set the pan over low heat and cook the mixture, stirring constantly, until the sugar has dissolved.

3. Increase the heat to moderate and boil the syrup for 2 minutes.

4. Remove the dish from the refrigerator and pour the syrup over the pearS, set aside to cool.

5. Chill the dish in the refrigerator for 1 hour or until ready to serve.
