1 1/2 pound peas, weighed after shelling
2 teaspoons sugar
salt
freshly ground black pepper
1/4 cup butter
4 small white onions, halved
2 shallots, thinly sliced
4 scallions, cut into 1/4 inch pieces
method
1. Put the peas in a saucepan with the sugar and salt. Pour over enough hot water to cover and bring to the boil.
2. Cook for 4 minutes, or until nearly tender then drain.
3. Melt the butter in another saucepan. Add the onions, shallots and scallions and fry until golden brown. Season to taste, then stir in the peas.
4. Cook for an additional 3- 4 minutes or until the peas are hot and tender.
