A strongly flavoured fruit is used in this poor mans cream to mask the distinctive sweet taste of the evaporated milk.

1/2 pound dried apricots
1 1/4 cups evaporated milk
2/3 cup flaked almonds
method
1. Boil the unopened can of evaporated milk in water for 15 minutes. Refrigerate overnight. Soak the apricots overnight in tepid water.
2. Drain the apricots and rub the flesh through a sieve. Turn out the evaporated milk into a bowl and whisk it until thick. Then fold into it the puree. Turn the mixture into 1 large or 6 individual serving dishes. Chill in the refrigerator for 1 hour. Just before serving, decorate the top with flaked almonds.
3. Cooking time: overnight preparation, then 1 1/2 hours, plus 1 hour chilling
