Cooking time: 12 hours marinating, then about 1 1/2 hours

3/4 pound beef shin, cut into 1/2 inch cubes
2 tablespoons Worcestershire sauce
4 cups water
2 onions, chopped
2 carrots, cut into matchsticks
2 celery stalks, sliced
1 bouquet garni
1 tablespoon tomato paste
salt
freshly ground black pepper
1/2 cup pasta shapes
1 tablespoon butter
2 tablespoons flour
method
1. Put the beef in a plastic bag and sprinkle over the Worcestershire sauce.
2. Close the bag and leave to marinate in the refrigerator for 12 hours, shaking the bag occasionally.
3. Pour the meat and sauce into a saucepan. Add the water and bring to the boil.
4. Stir in the vegetables, bouquet garni, tomato paste and seasoning and simmer for 45 minutes.
5. Stir in the pasta shapes and simmer for 30 minutes more or until the meat is tender. Discard the bouquet garni.
6. Mash the butter with the flour. Add a little of the hot liquid, then stir this mixture into the rest of the liquid in the pan. Simmer, stirring, until thickened.
