1 1/2 lb fresh pineapple, sliced, skin, core and woody eyes removed, flesh chopped
1 cup low-fat natural yoghurt
1 cup chilled skimmed milk
2 level teaspoons caster sugar
3 level tablespoons chopped fresh mint
Mint sprigs for decoration
method
1. Put the pineapple flesh with the yoghurt, milk, sugar and chopped mint in a food processor and blend for 1-2 minutes until the mixture has an even, creamy texture.
2. Strain the pineapple drink into four tumblers, decorate each with a mint sprig and serve immediately.
