You can use chopped ham or salami instead of the cabanossi.

1 1/2 tablespoons butter
5/8 cup button mushrooms, finely chopped
1 small tomato, peeled, seeded, finely chopped
1 small red pepper (capsicum), seeded, finely chopped
1 small onion, finely chopped
1 stick cabanossi, finely chopped
1 teaspoon dried basil leaves
4 eggs
2/3 cup cream
1 cup Parmesan, grated
method
1. Preheat the oven to moderate 180°C (350°F). Heat the butter in a pan, add the mushrooms, tomato, pepper, onion, cabanossi and basil and cook until soft.
2. Mix the eggs, cream and Parmesan. Add the mushroom mixture and pour into a greased 8 inch pie plate. Bake for 30 minutes. Cool to room temperature and cut into small wedges to serve.
