1 pound plums, washed and stoned (pitted)
1/4 cup sugar
1/4 teaspoon ground cinnamon
1 cup red wine
4 thick pork chops, trimmed of excess fat
1 teaspoon salt
1/2 teaspoon black pepper
method
1. Heat the broiler to high. In a medium-sized saucepan, bring the plums, sugar, cinnamon and red wine to the boil over moderate heat.
2. Reduce the heat to low and simmer for 10 - 15 minutes, or until the plums are soft.
3. Heat the oven to moderate, 180°C (350°F). Rub the chops with the salt and pepper and place them on the broiler rack.
4. Reduce the heat to low and broil for 3 minutes on each side, or until they are lightly browned.
5. Transfer the chops to an ovenproof serving dish and keep warm.
6. Puree the plums through a food mill or sieve then pour the puree over the chops.
7. Cover the dish and bake for 1 hour.
