Potato cakes with bacon

Plain potato and onion, transformed into fluffy little cakes and crowned with crisp bacon rolls, spread an appetising aroma as they cook.

OVEN: Preheat to 220°C (425°F)

1. Bring the potatoes to the boil in enough unsalted water to cover them, then simmer for 5 minutes. Rinse in cold water, drain, and when they are cool, grate them coarsely into a bowl.

2. Heat half the oil in a saucepan and fry the onion in it for about 5 minutes, until golden. Mix the onion with the potato and season the mixture with pepper.

3. Spoon the potato mixture into 12 equal mounds well spaced out on nonstick baking trays. Flatten the tops with the back of the spoon and brush lightly with the remaining oil. Bake in the heated oven for about 15 minutes, or until golden brown on top.

4. Stretch out each rasher of bacon thinly with the back of a knife and cut it across into three equal pieces. Roll up the pieces and thread them onto skewers, spacing them out well. Put in a baking dish and cook in the oven for the last 12 minutes with t
