Raised Doughnuts

ingredients

makes 2 dozen.
1 cake yeast
1/4 cup lukewarm water
1 cup scalded milk
1 teaspoon salt
2 tablespoons shortening
3 1/2 to 4 cups sifted flour
1 egg
1/2 teaspoon nutmeg

method

1. Soften yeast in water. Add scalded milk to salt, sugar and shortening. When lukewarm add softened yeast. Add 1 1/2 cups flour.

2. Allow the sponge to stand in a warm place until it is so light that it will fall at the slightest touch.

3. Add egg, nutmeg and remainder of the flour and knead. The dough should be softer than bread dough. Cover and set in a warm place to rise.

4. Toss on a lightly floured board and roll 3/4 inch thick. Cut with a doughnut cutter and let rise.

5. Fry in hot deep fat (365° F.) 2 to 3 minutes. When frying put the raised side of the doughnut down in the fat. The heat will cause the top side to rise by the time the doughnut is ready to turn.

Jelly Doughnuts - Cut doughnuts with cookie cutter and fry as above. Cut a hole in doughnut from side and fill with jelly. Replace cut-out section. Roll in sugar.

Long Johns - Cut dough into strips and fry as above. Cut a slit in top and fill with jelly. Frost top with confectioners' frosting.
