ingredients
makes 10 - 12 slices
1/4 cup butter, cut into pieces, plus 1 teaspoon
1 cup sugar
1 cup milk
1 cup Seedless white raisins or seedless raisins
2 cups self-raising flour
1 egg, lightly beaten
method
1. Heat the oven to 180°C (350°F). With the spoonful of butter lightly grease a 2 pound loaf pan.
2. Put the sugar, milk, dried fruit and the remaining butter in a medium-sized pan and place over moderate heat.
3. Gradually bring the mixture to the boil, stirring occasionally. Remove the pan from heat.
4. When the mixture has cooled, stir in the flour, a little at a time, until it is incorporated.
5. Add the egg and beat all the ingredients thoroughly until they are mixed well. Spoon the mixture into the prepared loaf tin and place it in the oven.
6. Bake for 1 1/4 hours or until a skewer inserted into the loaf centre comes out clean.
7. Remove from the oven and leave the loaf in the tin for 10 minutes. Turn out on to a wire rack to cool completely.
