Ranchers eggs, baked with vegetables and cheese, are easy to make and delicious for a simple supper, or even breakfast!
ingredients

1/3 cup red bell pepper, cored, seeded and thinly sliced
1 tablespoon oil
2 medium-sized onions, finely chopped
2 garlic cloves, crushed
6 large tomatoes, blanched, skinned, seeded and chopped
1 green chilli, seeded and finely chopped
1 teaspoon sugar
1/2 teaspoon ground cilantro
salt
freshly ground black pepper
12 eggs
1 1/2 cups Cheddar cheese, grated
1 tablespoon butter
1/4 teaspoon chilli powder
method
1. Heat the oven to 230°C (450°F).
2. Blanch the red pepper for 2 minutes in boiling water, drain and set aside to cool a little.
3. Heat the oil in a frying-pan. Add the onions and garlic and fry over low heat until softened.
4. Stir in the tomatoes, red pepper, chilli, sugar, cilantro. Season to taste. Simmer for 15 minutes.
5. Pour the tomato mixture into a baking dish. Make 12 hollows with the back of a spoon and break an egg into each.
6. Sprinkle the cheese over the eggs, then dot with the butter and sprinkle over the chilli powder.
7. Bake for 6 - 8 minutes or until the eggs are set and the top is golden brown.
