3/4 pound raspberries
2 tablespoons superfine sugar
2 cups organic, natural bio yoghurt
1 1/2 cups muesli, or crunchy oat breakfast cereal with honey, raisins and almonds
1 tablespoon runny honey
method
1. Put the raspberries and sugar into a bowl, mix and set aside.
2. In another bowl, mix the natural yoghurt with the muesli or breakfast cereal. Add the honey, stirring it in lightly, so the mixture is streaky
3. Divide two-thirds of the mixture among four wide 8 fl ounce glasses. Top with the raspberries, then add the remaining mixture. Drizzle a little honey over the top, or sprinkle with muesli or cereal.
4. If it is served immediately, this dessert has a crunchy texture, but if you prefer a softer, creamier texture, chill it for 3 - 4 hours before serving.
