1 1/2 tablespoons oil
1 large onion, sliced
6 fatty bacon slices, chopped
1 large cooking apple, peeled, cored and sliced
2 large potatoes, sliced
1 medium-sized red cabbage, shredded
1 1/2 teaspoons caraway seeds
2 tablespoons lemon juice
1 tablespoon wine vinegar
salt
freshly ground black pepper
1 1/4 cups chicken stock
1 tablespoon brown sugar
method
1. Heat the oven to 180°C (350°F).
2. Heat the oil in a flameproof dutch oven.
3. Add the onion and fry until softened. Add the bacon and fry until lightly browned.
4. Stir in the remaining ingredients and bring to the boil.
5. Cover the pot and transfer it to the oven.
6. Braise for 2 hours or until the cabbage is tender.
