1/2 medium-sized red cabbage, cored and finely shredded
3 dessert apples, cored and chopped
8 scallions, finely chopped
2 medium-sized carrots, thinly sliced
1/2 cup shelled walnuts, chopped
FOR THE DRESSING
1/3 cup olive oil
1 tablespoon clear honey
juice of 1 lemon
2 tablespoons wine vinegar
salt
freshly ground black pepper
1/2 teaspoon caraway seeds
method
1. Combine the cabbage, apples, onions, carrots and walnuts in a salad bowl.
2. Put all the dressing ingredients in a screw-top jar and shake well.
3. Pour the dressing over the salad and toss.
4. Chill for 30 minutes before serving.
