Cooking time: about 1/2 hour plus cooling

1 1/4 cups graham crackers, finely crushed
grated rind of 1 orange
6 tablespoons butter, melted
2 tablespoons fine sugar
3/4 pound mixed strawberries, raspberries and ripe blackberries
3 tablespoons redcurrant jell-o
2 tablespoons fruit juice or water
method
1. Heat the oven to 180°C (350°F). Combine the biscuit (graham cracker) crumbs, orange rind, butter and sugar.
2. Turn into a greased 7 inch tart tin or pie plate and make an even layer on the bottom and sides by smoothing with a glass jar.
3. Bake for 10 minutes, then cool.
4. Hull and halve the strawberries. Gently remove the crust from the tart tin (if using). Arrange the fruit decoratively in it.
5. Melt the jell-o in the fruit juice or water, then brush this glaze over the fruit.
6. Leave to set for 30 minutes before serving.
