butter, to grease
1/2 cup short grain pudding rice
2 pints whole milk
1/4 cup golden superfine sugar
grated zest of 1 orange (optional)
1 tsp vanilla extract
freshly grated nutmeg, to taste
method
1. Lightly butter a 3 pint ovenproof dish. Add the pudding rice, milk, sugar, orange zest if using, and vanilla extract and stir everything together. Grate the nutmeg over the top of the mixture.
2. Bake the pudding in the middle of the oven at 170°C (150°C fan oven) for 1 1/2 hours or until the top is golden brown.
note: Orange zest gives the pudding a fruity tang, but you can leave it out tor a more traditional flavour.
