Ricotta and Olive Scramble

ingredients

6 eggs
4 tablespoons milk
1/2 teaspoon black pepper
1/2 teaspoon dried basil
3 tablespoons olive oil
1/4 pound green olives, stoned (pitted) and quartered
1 red (bell) pepper, white pith removed, seeded and chopped
1/2 cup Ricotta or curd cheese
1/2 cup grated Parmesan cheese

method

1. Heat the broiler to high. In a medium-sized mixing bowl, lightly beat the eggs, milk, pepper and basil together.

2. In a shallow pan, heat the olive oil over moderate heat. Add the olives and red pepper and cook, stirring frequently, for 3 minutes.

3. Add the cheese and, stirring constantly, cook for a further 2 minutes.

4. Reduce the heat to low. Pour the egg mixture into the pan and cook, stirring constantly, until the eggs are nearly scrambled.

5. Remove the pan from the heat. Sprinkle over the Parmesan cheese and place the pan under the broiler.

6. Cook for 3 minutes or until the cheese has melted and the top is lightly browned.

Serve at once.
