5 sweet potatoes, about 1.2 1/4 pound in total, peeled
2 tbsp chopped sage
2 tsp yellow mustard seeds
3 - 4 tbsp olive oil
salt and pepper
method
1. Cut the sweet potatoes into wedges and put into a large roasting tin. Add the chopped sage, mustard seeds and olive oil, and season well with salt and pepper.
2. Toss well to coat the sweet potatoes with the oil and flavourings.
3. Roast at 200°C (180°C fan oven) for 50 minutes to 1 hour until golden and tender, turning twice during cooking.
