Cooking time: 20 minutes plus cooling time

2 cups flour
2 teaspoons baking powder
pinch of salt
1/2 teaspoon mixed spice
1/2 teaspoon grated nutmeg
1/4 cup butter
2 tablespoons lard
1/2 cup soft brown sugar
2 tablespoons chopped mixed candied peel
1/2 cup mixed dried fruit
grated rind of 1/2 lemon
1 medium-sized egg

method
1. Heat the oven to 200°C (400°F). Sift the flour, baking powder, salt and spices into a bowl.
2. Rub in the fats until the mixture resembles breadcrumbs.
3. Stir in the sugar, peel, dried fruit and lemon rind.
4. Add the egg and just enough milk to bind the mixture. It should be stiff.
5. Divide the mixture into 6 - 8 portions and shape each into a slightly flattened ball. Place these on a greased baking sheet, 1 1/2 inch apart.
6. Bake for 15 minutes or until pale golden brown and firm. Cool on a wire rack.
