ingredients
makes 2 loaves.
1 cake yeast
1/4 cup lukewarm water
1 teaspoon sugar
1 1/2 teaspoons salt
2 tablespoons shortening
2 tablespoons sugar
2 cups milk, scalded
6 cups sifted flour, about
6 tablespoons brown sugar
1 teaspoon cinnamon
method
1. Add yeast to lukewarm water and 1 teaspoon sugar. Let stand 5 minutes.
2. Add salt, shortening and remaining sugar to milk and cool to lukewarm.
3. Add softened yeast and 3 cups flour. Beat well. Add enough more flour to make a soft dough.
4. Place remaining flour on board, turn out dough on floured board and knead until smooth and elastic.
5. Place in greased bowl, turn over, so that greased side is on top, cover with cloth and let rise until doubled in bulk.
6. Punch down and let rise a second time if desired.
7. When dough is light, divide into halves and roll each half into a sheet 9 inches square.
8. Sprinkle with a mixture of brown sugar and cinnamon. Roll up like jelly roll and place, seam side down in greased bread pans. Let rise until light.
9. Bake in hot oven (425°F.) 15 minutes, then reduce temperature to moderate (375°F.) and bake 25 minutes longer.
10. Remove from pans and cool.
