Rosemary and Cheese Biscuits

ingredients

makes about 50
1 cup All purpose flour
salt and cracked black pepper
1/2 cup butter, chopped
1 tablespoon sour cream
5/8 cup Cheddar cheese, grated
5/8 cup Parmesan cheese, grated
3 teaspoons chopped fresh rosemary
3 teaspoons chopped fresh chives

method

1. Preheat the oven to moderate 180°C (350°F). Lightly grease 2 baking trays with melted butter or oil. Sift the flour and some salt and cracked black pepper into a large bowl and add the chopped butter. Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.

2. Add the sour cream, cheeses and herbs and mix with a flat-bladed knife. Press the mixture together with your fingers until it forms a soft dough. Press into a ball, wrap in plastic wrap and refrigerate for 15 minutes.

3. Roll level teaspoons of the mixture into balls and place on the prepared trays, leaving a little room between the biscuits for spreading. Flatten slightly with a lightly floured fork.

4. Bake for 15 - 20 minutes, or until lightly golden. Transfer to a wire cake rack and leave until cool.
