Freezing Suitable: coat with flour and fry after thawing

1/2 cup Fresh breadcrumbs
2 tbsp Milk
1/2 pound Minced shoulder of lamb
1/4 cup Gruyere cheese
1 Small egg
Salt and pepper
1 tbsp All purpose flour
2 tablespoons Butter
8 ounce Can of tomatoes
method
1. Put breadcrumbs in a large bowl with the milk and soak for a few minutes. Add the lamb, grated cheese, egg and seasoning and mix well. Divide the mixture into four and shape into patties. Coat lightly with flour.
2. Melt butter in a skillet and fry for 5 minutes on each side. Remove from pan with a spatula and place on a warmed serving dish. Keep hot.
3. Heat tomatoes in a saucepan. Drain and arrange on serving dish with the burgers. Serve a hot tomato sauce separately, if liked, and mashed potatoes topped with crisp fried breadcrumbs and bacon bits.
