6 tablespoons butter, at room temperature
1 generous cup All purpose flour
6 tablespoons blanched filberts, lightly toasted and ground
2 tablespoons superfine sugar
2 egg yolks beaten with 2 - 3 tbsp water
1/4 pound goat's cheese
4 - 6 large strawberries, cut into small pieces
chopped filberts, to decorate
method
1. Make the pastry. Put the butter, flour, ground filberts, sugar and beaten egg yolks into a food processor and process to make a smooth dough.
2. Put the dough on to clear film and use the film to shape it into a log 1 1/2 inch in diameter. Wrap and refrigerate overnight until very firm.
3. preheat the oven to 200°C/400°F and line a large baking sheet with non-stick baking paper. Slice the dough into 1/4 inch thick rounds and arrange on the baking sheet. Bake for 7 - 10 minutes until golden brown. Remove to a wire rack to cool.
4. Crumble the cheese into pieces and mound a little on each sable. Top with strawberry and sprinkle with filberts. Serve warm.

Variation - Beat 3 ounce cream cheese with 1 tbsp Confectioner’s sugar and a little lemon zest. Spread on top of the sable and top with any sliced fruits.
