2 cups milk
1/2 pound cheddar cheese, grated
3 cups fresh white breadcrumbs
2 teaspoons dried sage
1/2 small onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
4 eggs, separated
method
1. Heat the oven to 180°C (350°F). Scald the milk (bring to just below boiling point) then set aside to cool to lukewarm.
2. In a large mixing bowl, place the cheese, breadcrumbs, sage, onion, salt, pepper and egg yolks. Combine well with a fork.
3. Gradually stir in the milk, then set the mixture aside for 30 minutes.
4. Beat the egg whites until they form stiff peaks. Using a large metal spoon, carefully fold the egg whites into the cheese mixture then spoon it into a greased medium-sized oven-proof dish.
5. Bake for 50-55 minutes or until the top is golden brown and the mixture has set.
Serve at once.
