Sage and Onion Stuffing

ingredients

serves 4 - 6
1 tbsp oil
1/2 cup onion, peeled and chopped
4 ounce pork sausage meat
1 tbsp finely chopped sage
salt and pepper

method

1. Heat the oil in a pan, add the onion and cook gently for 7 - 10 minutes until soft and golden. Turn into a bowl and leave to cool.

2. Add the sausage meat and sage to the cooled onion mixture and season with salt and pepper.

note; This stuffing is sufficient for a 3 pound oven-ready chicken.
