Sage Soda Bread

ingredients

makes 1 loaf
1 1/2 cups whole wheat flour
1 cup strong white flour
1/2 tsp salt
1 tsp bicarbonate of soda
2 tbsp shredded fresh sage or 2 tsp dried sage
1 1/4 - 1 3/4 cups buttermilk

method

1. Preheat the oven to 220°C/425°F. Sift the dry ingredients into a mixing bowl.

2. Stir in the sage and add enough buttermilk to make a soft dough.

3. Shape the dough into a round loaf with your hands and place on a lightly oiled baking sheet.

4. Cut a deep cross in the top. Bake in the oven for about 40 minutes until the loaf is well risen and sounds hollow when tapped on the bottom. Leave to cool on a wire rack.
