2 pounds sardines (at least 12), gutted
1/2 cup olive oil
3 tbsp lemon juice
2 tsp grated lemon zest
4 tbsp chopped mixed herbs, such as parsley, chervil and thyme
salt and pepper
method
1. If preferred, bone the sardines, leaving the heads and tails intact. Rinse the sardines and pat dry with kitchen paper
2. In a bowl, mix together the olive oil, lemon juice, lemon zest, herbs and seasoning.
3. Lay the sardines on a grill rack, drizzle the herb dressing over them and grill under a medium-high heat for 5 - 7 minutes each side, basting frequently with the dressing.
Serve hot or cold, accompanied by plenty of crusty bread.
