Fresh or frozen sardines are delicious freshly broiled and served with mayonnaise-based watercress sauce.

12 fresh sardines, cleaned
2 tablespoons oil
1 bunch of watercress, finely chopped
1 tablespoon chopped parsley
1 cup mayonnaise
salt
freshly ground black pepper
method
1. Heat the broiler to high. Arrange the sardines in one layer in the grill pan and brush with half the oil.
2. Grill (broil) for 3-5 minutes or until lightly browned, then turn the sardines over, brush with the rest of the oil and cook for a further 3 - 5 minutes.
3. Meanwhile, combine the watercress, parsley, mayonnaise and seasoning in a serving bowl.
4. Serve the sardines hot accompanied by the watercress sauce.
