Sauce Tartare

ingredients

yolks of 2 hard-boiled eggs
4 teaspoons Dijon mustard
1 tablespoon lemon juice
2/3 cup olive oil
salt
white pepper
1 teaspoon each of finely chopped
chives, parsley and capers
1 small gherkin, finely chopped
2 tablespoons thick cream

method

1. Press the hard-boiled egg - yolks through a strainer with a wooden spoon into a bowl.

2. Work in the mustard and lemon juice to make a paste. Add the oil in drops and complete like a mayonnaise.

3. Make the other additions, then chill.
