Sauteed Scallops

ingredients

serves 4
1 pint scallops
1 cup dry bread crumbs
Salt and pepper
1 egg, beaten

method

1. Drain scallops and remove any bits of shell. Season with salt and pepper.

2. Dip in fine crumbs, in beaten egg and again in crumbs.

3. Saute quickly in shallow fat, turning to brown all sides.

4. Do not cook longer than 5 minutes. Drain on absorbent paper.

Serve with tartare sauce.
