Savoury Pears

Cooking time: 40 minutes

ingredients

serves 8
4 fatty bacon slices, rinded
1 cup curd cheese
2 teaspoons lemon juice
1 teaspoon oil
1 teaspoon Worcestershire sauce
salt
4 large ripe dessert pears, peeled, halved and cored
watercress sprigs to garnish

method

1. Heat the broiler to moderate. Lay the bacon slices on the rack and cook until crisp. Drain on absorbent paper and crumble.

2. Mix together the cheese, half the lemon juice, oil, Worcestershire sauce and seasoning, then fold in the bacon.

3. Place the pear halves on serving plates and brush over with the remaining lemon juice.

4. Fill the hollow in each with a generous spoonful of the cheese and bacon.

5. Garnish with watercress and chill.
