Scallops en Brochette

ingredients

serves 4
1 pint scallops
6 to 8 slices bacon
3 tablespoons butter
Salt and pepper

method

1. Cook scallops in butter 5 minutes.

2. Cut bacon into 2-inch pieces.

3. Arrange scallops and bacon alternately on skewers. Season with salt and pepper.

4. Stand skewers upright in large uncooked potato and bake in moderate oven (350°- 400°F.) until bacon is crisp, about 15 minutes. Or place on broiler rack and brown on all sides under broiler.

5. Serve on skewers or lay each brochette across a slice of toast and remove skewer.
