1 pound potatoes, peeled and grated
4 small scallions, trimmed and finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon butter
3 tablespoons vegetable oil
method
1. Place the grated potatoes in a large mixing bowl. With a kitchen fork, stir in the scallions, salt and pepper. Set aside for 10 minutes.
2. Drain off the liquid and pat the surface of the mixture dry with absorbent paper.
3. In a medium-sized frying-pan, melt the butter with the oil over moderate heat.
4. When the foam subsides, place 2 tablespoons of the potato mixture in the pan, flattening it slightly with the back of the spoon.
5. Add two or three similar amounts to the pan. Fry the fritters for 2 to 3 minutes, until they are golden brown on both sides, turning once.
6. Using a slotted spoon, transfer the potato cakes to absorbent paper to drain.
7. Cook and drain the remaining potato mixture in the same way. Serve immediately.
