Scottish Shortbread

ingredients

1 cup flour
1/2 cup rice flour
pinch of salt
1/4 cup fine sugar
1/2 cup butter
fine sugar to dredge

method

1. Heat the oven to 160°C (325°F). Sift the flour, rice flour, salt and sugar into a bowl.

2. Cut the fat into the flour, then knead the mixture to form a smooth dough. Press into a shortbread mould or 7 inch cake pan dusted with rice flour; then turn out onto a greased baking sheet.

3. If you used a cake pan, flute the edges to make a frilly effect.

4. Mark the shortbread into portions with a sharp knife.

5. Bake for 45 minutes or until pale golden and firm. Cool on a wire rack, then dredge with fine sugar.
