1. Melt the butter or margarine in a saucepan. Add the tofu to the pan, mashing it with the fat to make a crumb-like mixture. Saute for a few minutes.
2. Beat the eggs with salt and pepper to taste and pour the mixture over the tofu.
3. Cook gently, stirring the eggs up from the bottom of the pan, until the mixture begins to set but is still soft.
4. Remove the pan from the heat and allow the egg to set completely for about 1 minute before serving it on toast or a bed of fresh, lightly steamed spinach.
5. Sprinkle paprika and chopped fresh chives over the top.
