1/2 iceberg lettuce, washed and shredded
6 ounce cooked peeled shrimps or shrimps, flaked
white crab meat or lobster meat, defrosted if frozen
dressing
2 tbsp mayonnaise
2 tbsp tomato ketchup
2 tbsp yogurt
squeeze of lemon juice, or a dash of Worcestershire sauce
salt and pepper
to serve
cucumber slices, capers or lemon wedges
method
1. Line four small glasses with shredded lettuce.
2. For the dressing, in a bowl, mix the mayonnaise with the tomato ketchup, yogurt and lemon juice or Worcestershire sauce. Season with salt and pepper to taste.
3. Combine the shellfish and dressing, and pile the mixture into the glasses.
4. Garnish with cucumber slices, capers or lemon wedges and serve immediately.
