Shrimp Fritters

ingredients

makes about 30
2/3 cup All purpose flour
1/3 cup self rising flour
2 scallions, chopped
2 tablespoons chopped fresh flat-leaf parsley
pinch of cayenne pepper
3/4 cup soda water
4 ounce small cooked shrimps, peeled and chopped
olive oil, for deep-frying

method

1. Sift the flours into a large bowl. Add the scallion, parsley, cayenne pepper and some salt and mix well. Make a well in the centre and gradually add the soda water, whisking to form a smooth lump-free batter. Add enough soda water to form a batter that will drop from a spoon. Add the shrimps and stir until combined.

2. Fill a deep heavy-based pan one third full of oil and heat to 180°C (350°F), or until a cube of bread dropped into the oil browns in 15 seconds.

3. Drop half tablespoons of the batter into the hot oil in batches and cook for 1 - 2 minutes, turning, until puffed and evenly browned all over.

4. Remove with a slotted spoon and drain on crumpled paper towels. Serve hot.
