3 cups flour
1/2 teaspoon baking powder
1/2 cup ground rice (rice flour)
1 teaspoon salt
1/4 cup butter
1/4 cup fine sugar
1/2 cup currants
1 1/4 cups mixed thin cream and milk (half and half)
method
1. Sift the flour, baking powder, rice (rice flour) and salt into a bowl.
2. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and currants, then gradually work in the liquid to make a soft but not sticky dough.
3. Knead the dough quickly and lightly. Roll out to a 9 inch circle that is 1/4 inch thick.
4. Lightly grease a griddle or heavy-bottomed skillet and heat very gently until really hot.
5. Place the singin' hinny on the griddle and cook for 4 - 5 minutes or until risen and brown on the underside.
6. Turn over and cook for a further 4 - 5 minutes. Serve, cut into wedges, with butter.
