4 noisettes of lamb
2 teaspoons prepared mustard
1 clove garlic, chopped
few rosemary sprigs, crushed
8 shallots or small onions
8 small tomatoes
olive oil
salt and pepper
method
1. Trim the noisettes of lamb and spread each side lightly with mustard.
2. Sprinkle with a little chopped garlic and crushed rosemary.
3. Peel and parboil the onions until they are almost tender.
4. Thread the onions on to skewers with the lamb noisettes and tomatoes.
5. Brush with oil and season with salt and pepper.
6. Grill over medium coals for 30 minutes, turning frequently.
7. Serve with boiled rice.
