The beer is optional and 1/4 pint of milk could be substituted, if more to your family's taste. Any dish using toast should be cooked immediately before serving or the toast will be soft and soggy. However, it is possible to make the spaghetti mixture and keep it separate until the last minute.

3 ounce spaghetti
2 tablespoons Butter
1/4 pint beer
pinch paprika pepper
pinch cayenne pepper
1/4 teaspoon dry mustard
1 1/2 teaspoons piquant table sauce or ketchup
1/2 pound cheese, grated
4 slices bread, toasted
method
1. Cook the spaghetti in boiling salted water for 15 minutes, until just tender.
2. Drain and toss in the butter.
3. Place in a hot serving dish and keep warm.
4. Pour the beer into a pan, add the seasonings and heat gently.
5. When hot, add the cheese and stir until melted.
6. Pour over the spaghetti.
7. Place spaghetti on toast, then grill until cheese browns slightly.
