Spiced Chicken

Spiced chicken cooked in cider is a tasty new way to serve chicken. Dry cider is the best choice.

ingredients

4 chicken breasts
2 tablespoons Butter
1 tablespoon cooking oil
1 small onion, chopped
2 tablespoons flour
salt and pepper
1/2 level teaspoon ground ginger
1 level teaspoon paprika
1 1/2 cups cider
1 tablespoon tomato puree
1/4 teaspoon sugar
1 tablespoon chopped parsley

method

1. Preheat oven to very moderate, 170°C (325°F).

2. Fry chicken in butter and oil till browned.

3. Remove and fry onion till soft.

4. Work in flour, seasonings, ginger and paprika.

5. Add cider and stir in tomato puree, sugar and parsley.

6. Return chicken to the pan, baste well, cover and simmer for 20 minutes or cook in the oven for 30 minutes.

7. Remove chicken from pan and place on lettuce on a serving dish. Stir sauce well then pour into a sauceboat.

8. Serve chicken with the sauce and boiled rice.
