1 1/4 cups cider
2 cloves
4 mild-cure 1 1/2 lb ham steak
1 tablespoon cornstarch
75 g (3 oz) 1/3 cup Demerara (brown) sugar
1/2 teaspoon dry mustard
1/4 teaspoon ground ginger
1/4 teaspoon grated nutmeg
2 ounce button mushrooms, thinly sliced
4 canned pineapple rings
method
1. Heat the oven to 180°C (350°F).
2. Put the cider and cloves into a saucepan and boil briskly until reduced to 2/3 cup. Cool slightly.
3. Place the meat in a single layer in a greased baking dish. Combine the cornstarch, sugar, mustard, ginger and nutmeg and sprinkle over the top.
4. Surround with the mushrooms and place the pineapple rings on top.
5. Pour in the cider. Cover the dish and bake for 25 - 30 minutes.
