If you prefer, mix the salad thoroughly and chill for 1-2 hours in the refrigerator before serving.

4 level tablespoons low-fat natural or Greek yoghurt
2 teaspoons sesame or peanut oil
1 tablespoon cider vinegar
1/2 level teaspoon peeled and grated root ginger, or 1/4 level teaspoon ground ginger
1/4 level teaspoon ground cilantro
1 large cucumber, halved, quartered lengthways, de-seeded and cut into thin strips
1 small red pepper, de-seeded and cut into strips
1/4 level teaspoon cumin seeds
method
1. Blend the yoghurt, oil, vinegar, ginger and cilantro to make the dressing.
2. Mix the cucumber with the pepper in a salad bowl, spoon on the dressing, sprinkle with the cumin seeds and serve at once.
