This stuffing is sufficient for a 10 pound oven-ready turkey.

3/4 pound spicy Italian-style pork sausages
1/2 cup butter
2 onions, peeled and chopped
1/2 pound oatmeal
1 tsp finely chopped thyme
salt and pepper
method
1. Skin the sausages and break up the sausage meat in a bowl.
2. Melt the butter in a pan, add the onions and cook gently for 7 - 10 minutes until soft and golden, then mix in the oatmeal and thyme. Leave to cool.
3. Add the mixture to the sausage meat and mix well, seasoning generously with salt and pepper.

Variation: Shape the mixture into small balls. Heat a little oil in a baking tin. Add the sausage balls and bake at 180°C (160°C fan oven) for about 45 minutes until cooked through, turning occasionally.
