If you sprout beans, lentils and whole grains it increases their nutritional value, and they make a deliciously crunchy salad.
ingredients
serves 4
2 eating apples
1/4 pound alfalfa sprouts
1/4 pound beansprouts
1/4 pound aduki beansprouts
1/4 cucumber, sliced
1 bunch watercress, trimmed
1 carton mustard and cress, trimmed
For the dressing
2/3 cup low fat natural yogurt
juice of 1/2 lemon
bunch of chives, snipped
2 tbsp chopped fresh herbs
ground black pepper
method
1. Core and slice the apples and mix with the other salad ingredients.
2. Mix the dressing ingredients in a I jug. Drizzle over the salad and toss together just before serving.
