1 1/2 pound good quality stewing steak
4 ounce ox kidney
1/4 cup flour, seasoned with salt and pepper
about 1/2 pint beef stock
1/2 pound puff pastry
1 egg,beaten
method
1. Cut the meat into large squares.
2. Wash and cut up the kidney and discard any core.
3. Toss the meat and kidney in seasoned flour.
4. Put the stock, meat and kidney in a pan and simmer for 2 hours, stirring occasionally.
5. When meat is nearly done, preheat oven to moderately hot 200°C (400°F).
6. Put the cooked meat in an oval pie dish with most of the stock. Allow to cool.
7. Roll out the pastry and cut a strip off to put on the edge of pie dish.
8. Wet edge of dish and put pastry strip in place. Then wet pastry strip.
9. Use rest of pastry to make a lid for the pie and put in place.
10. Seal pastry edges, knock up with the blade of a knife and flute by pinching between thumb and forefinger.
11. Using pastry trimmings to make leaves for the top of the pie. Decorate as in the picture.
12. Brush all pastry with beaten egg
13. Make a small hole in the top of the pie.
14. Bake, in the centre of the preheated oven for 20 minutes then reduce heat to moderate, 180°C (350°F) and cook for 15 minutes more or until golden brown.
