Sticky Date and Apple Bars

If possible allow this mixture to mature for 1-2 days before cutting - it will get stickier and better!

ingredients

makes about 16 bars
1/2 cup margarine
4 tbsp soft dark brown sugar sugar
4 tbsp corn syrup
1/4 pound chopped dates
1 1/4 cups rolled oats
1 cup whole wheat self rising flour
2 dessert apples, peeled, cored and grated
1 - 2 tsp lemon juice
20 - 25 walnut halves

method

1. Preheat the oven to 190°C/375°F. Line an 7 - 8 inch square or rectangular loose-based cake pan. In a large pan heat the margarine, sugar, syrup and dates, stirring until the dates soften completely.

2. Gradually work in the oats, flour, apples and lemon juice until well mixed. Spoon into the tin and spread out evenly. Top with the walnut halves.

3. Bake for 30 minutes, then reduce the temperature to 170°C/325°F and bake for 10 - 20 minutes more, until firm to the touch and golden. Cut into squares or bars while still warm, or wrap in foil when nearly cold and keep for 1-2 days before eating.
