1 pound boneless uncooked turkey
5 sticks celery
2 tablespoons oil
1 cup mushrooms, sliced
1 tablespoon soy sauce
salt and pepper
1 tablespoon cornstarch
4 tablespoons chicken stock
chopped parsley to garnish
method
1. Cut the turkey into slices. String the celery and cut it into short lengths.
2. Heat the oil in a large skillet and use to fry the turkey slices briskly for about 5 minutes, stirring all the time.
3. Add the celery, mushrooms and soy sauce and season with a little salt and pepper.
4. Cook the mixture for a further 5 minutes, stirring frequently.
5. Blend the cornstarch with the stock, add to the mixture in the skillet and bring to the boil, stirring continuously.
6. Simmer for 2 minutes before serving sprinkled with chopped parsley.
